Abstract
In this paper, the problem of weight loss of foods in display cases has been re-seached. We analyzed the mechanism of the weight loss of foods on theoretics. And we analyzed the effect factors of weight loss which are characteristic of foods, condition in displaycases and air environment. We put forward some practical measures for lessing the weight loss of foods in display cases finally. Our research work will provide guidance to the problem of weight loss of foods in display cases.
