Abstract

Consumers commonly rank the varieties of rice eaten throughout Burkina Faso in a hierarchy of taste. This article is intended to show that although the ranking is based on the food’s physical qualities, it is also an expression of common representations of power that have a long history, one that contributes to defining “the taste of rice” and making it into both a sensory and a political value in Burkinabe society.
