Abstract

The various chapters in this volume have examined the relationship between tourism and gastronomy from different theoretical, sectoral and geographical perspectives. It is clear from this review that the relationship between tourism and gastronomy is a relatively new field of research, and much work remains to be done to bring this relationship into focus. This concluding chapter tries to bring together some of the major themes and issues identified in the preceding chapters, develops an epistemological framework in which to place the differing analyses of tourism and gastronomy, and presents areas for future research.
